BACON-WRAPPED JALAPENO SHRIMP

5 - 31/40 shrimp

2 oz jalapeno dipping sauce

5 slices cooked bacon

1 oz hot pepper cheese

1 oz spicy breading

1 - jalapeno

1 oz buttermilk

1 - leaf lettuce

 

Peel, de-vein and butterfly shrimp. Cut cheese and jalapeno into five long slices. Place 1 slice of cheese and jalapeno in middle of butterflied shrimp. Wrap cooked bacon around shrimp and toothpick. Dip in buttermilk, then spicy breading. Deep fry until golden brown (145 degrees). Place lettuce on plate, and then shrimp. Place ramekin of dipping sauce in middle of plate.
